Ryan,
For the work that you are describing, the best shop to go to is Speedwerks,
located in Dover, DE.  The specialize in racebike preparation, and they've done
many custom bikes like yours.  They've got a dyno and can do engine tuning and
fabrication work.  The shop is owned and staffed by racers. Call them at
302-672-RACE (7223).  

I also suggest that you visit TSR Performance in Timonium, MD.  While they
don't have the experience that Speedwerks does, they have a dyno and have a lot
of race supplies in stock and can help with any project.  You can call them at
410-785-3100.
